Yalumba Y Series Cabernet Sauvignon 2014 (Australia)

Yalumba Y Series Cabernet Sauvignon 2014 (Australia)

Enticing berry fruit, dewy eucalypt, briar and spicy oak aromas are the perfect opening. The palate builds slowly with black fruits and spice; rich and full, mouth coating cocoa tannins and blackcurrants. The wine has lovely length; the structure is restrained and seamless. This is a Cabernet that is contemporary, enjoyable and varietal.

A lovely match for this wine would be home-made lasagne.

The lead up to vintage was warm and mild; with rain late in 2013 setting the vines up nicely. In the New Year we experienced a string of hot weather events followed closely by unseasonably heavy rains. However, despite these challenges, Cabernet Sauvignon responded well showing finesse and elegance.
The grapes were fermented in static potter and rotary fermenters. Warm temperatures at the onset of fermentation and also 3-5 days post ferment maceration has helped extract soft fleshy tannins and build wine structure.
