The fruit was hand-picked from a vineyard site in the Dry River area south of Martinborough. The bunches were transferred whole to the press and underwent a 6 hour gentle pressing cycle to extract maximum flavour.
The juice was settled for 24 hours before racking to a stainless-steel tank where it underwent a spontaneous fermentation that lasted for one month. The wine was then chilled to 0ºC to maintain a small amount of residual sugar for balance. Following protein stabilisation and filtration, the wine was bottled in September 2020.
