Brilliant yellow pale color with greenish hue. The nose is expressive with citrusy aromas like Mayer lemon and lime combined with notes of green pineapple, green apple and quince framed by a petrichor tone. Fresh, light and lively on the palate. The steely acidity delivers structure and length to a flinty finish.

Situated in the north of Burgundy near the town of Auxerre in the Yonne department. 100% Chardonnay. Chalk and marls covered with pebbles. Continental climate with cold and dry winters and hot and sunny summers.

Crushing of the grapes before settling to obtain sufficient clarity – alcoholic fermentation between 20°C and 24°C / 68°F and 75°F – malolactic conversion. Ageing on fine lees in vats with oxygenation control.

Food Pairing: Ceviche-like seafood, white meat, goat cheese. Best served between 10 - 12°C / 50 - 54°F.
