Cool, wet spring resulted in very crops, however ripening conditions were near on perfect which resulted in very concentrated wines.
100% of the grapes were destemmed before pressing. Fermentation was indigenious and carried out in stainless steel tanks. Following this, the wine was matured for 3 months befoire fining, filtering and bottling.
Food Pairing: Sashimi, bluff oysters and trout risotto.
