Greystone Organic Barrel Fermented Waipara Sauvignon Blanc 2020

Greystone Organic Barrel Fermented Waipara Sauvignon Blanc 2020

  • French oak
  • Dry style
  • Tropical fruit
  • Spicy texture

"Flavoursome and distinctive Sauvignon Blanc with tree fruit, nectarine, struck-flint, citrus, red capsicum and white pepper flavours supported by crisp acidity and a spicy texture" Bob Campbell, Master of Wine, Real Review, Nov 2021

"Bright, medium yellow, even colour throughout. The wine has a ripe bouquet of fruit, packed with tropical fruit, citrus, white spice, herb and a suggestion of honey. Medium-full bodied, aromas of pineapple, lemon sherbet melded with white spice, unfolding zest and honey. The ripened fruit has vibrant acid tension. The palate is weighty with a creamy layer and fine-textured phenolics, contributed by barrel-fermentation and MLF. This is a complex Sauvignon Blanc with a tropical, citrus core and spice displaying its beauty on a creamy, textural palate. Match with savoury steamed custard and dim sum over the next 3-4 years. Wild-fermented in old French oak barrels for seven months, 95% MLF, 13.5% alc. BioGro organic certified, vegan friendly" Candice Chow, Raymond Chan Reviews, Nov 2021

"Pristine and finely expressed, the wine shows Granny Smith apple, lime peel, limestone and white floral nuances, leading to a brilliantly focused palate delivering excellent fruit purity and vibrancy. Delightfully textured and structured by vibrant acidity, finishing linear and persistent. At its best: now to 2028" Sam Kim, Wine Orbit, Dec 2021

"Wild white flowers and fresh green herbs, lemon and lemongrass, chalk and golden kiwifruit. On the palate - a wine all about texture and minerality then a core varietal flavour with citrus and herb, mineral and fruit spice. Young and fresh with an electric acid line, fine mineral-like lees complexity and lengthy persistent finish. Well mad and ready to drink from 2021 through 2026" Cameron Douglas, Master Sommelier, Dec 2021

Lemon in colour with a full aromatic display of citrus, tropical fruits, straw and oak complexity. The palate is smooth with fresh acidity and long mineral phenolics. Ripe fruit flavours unfold throughout.

In our vineyard we grow two rare clones of Sauvignon Blanc ( 376 and 530 ), originally taken from the Loire Valley. This is very different from the rest of New Zealand, which generally uses a singular Bordeaux clone. Our vines produce much smaller bunches with golden coloured grapes - the MS Bordeaux tends to a heavier bunch size and more green tinged. Our clones give us beautiful fruit flavours of golden kiwifruit, ripe pineapple and guava. 2020 was a gently warm and dry year for Waipara although harvesting under Covid restrictions made life tricky. Luckily the autumn meant the fruit was pristine and fully ripened.

We settled the fresh juice after a gentle pressing. We ferment all of our Sauvignon in old French Oak barrels with wild yeast taking seven months to get through to dryness going through almost full MLF concurrently. This prolonged fermentation provides complexity and natural lees stirring adds texture and depth to the flavours. Blended and estate bottled without fining, just prior to the new harvest.
