"Fabulous colour and bouquet with dark ruby at the core and purple pink hues at the rim. Aromas and flavours of dark cherry and cola, wild dried herbs and and spices from the forrest, a there’s a baked mushroom and silty dry soil quality. As the wine opens up in glass and on the third sip the melting of flavours and polished tannins begin to emerge with a velvet texture and power. A wine that keeps drawing me back for another sip the discover a new flavour or texture. Exciting, natural and new with an obvious pinosity and length. Deep purple, with a ruby crimson flash. The bouquet is a weave of dark-berry fruits, Black Doris plums, cocoa and baking spice, with a hint of herbaceousness. Medium- full-bodied, the palate is structured around the combination of whole bunch and oak tannins, defined by a clear acid line. Ripe dark fruit and spice are complemented by an earthy undertone and an elegant balanced finish.
This wine is harvested from the very best parcels of fruit on our Home Estate, typically from low yielding vines on the lowest vigor areas within the vineyard. Each bottle is hand painted by the winemaker Liam, with a little help from the wider team.
Hand-picked, this one tonne of Abel clone Pinot Noir made its way to the winery on 17th March 2021. Sugar levels at an optimum 25° Brix. The intact bunches were sorted and placed into an open top fermenter, where they were gently pigéaged to encourage the native yeasts from the vineyard to begin fermentation. Throughout fermentation, the temperatures were regularly monitored, and minimal punch downs utilized to ensure a clean ferment. After 3 weeks on skins, the free run was placed on 2nd fill French oak where it stayed for 14 months. No additives, no fining, no filtration. Just fermented grape juice!
