This Mystery Hawke's Bay Chardonnay is a rich barrel fermented wine in the classic style, with the accent on complexity and fruit weight.

The fruit for this wine is sourced from two great vineyards in subregions of Hawke’s Bay. The combination of a temperate climate and free draining stony silt loams make this region a paradise for grape growing. The vineyards are planted in Mendoza and 15 clones and consistently produce concentrated ripe fruit.

The fruit was harvested, pressed and the juice run immediately to French Barriques 20% of which were new. Fermentation occurred in barrel with both wild and cultured yeast to add complexity. The wine remained in barrel for 9 months with regular batonnage to promote texture. Approximately 30% of the barrels went through Malolactic fermentation in spring to enhance mouthfeel and buttery characters.

Food Pairing: Versatile with a wide range of foods, this wine is perfect with seafood, roast chicken or vegetables sautéed in garlic butter.
