"Bright, light straw-yellow colour, pale edged and with moderately persistent and fine bead. The bouquet is full and well-concentrated with a harmonious amalgam of yellow stonefruits and bready-yeasty, brioche-like autolysis. The aromatics are expressed with clarity, presence and with subtle complexing interest. Dryish to taste and medium-bodied, the palate has clear and positive fresh apple and stonefruit flavours intermingling with fine bready-yeasty autolysis in the background, The flavours form a good heart, the dosage adding a perceptible richness, and the mouthfeel is refreshing and balanced, with a creamy mousse and bright acidity. The wine flows along a fine-textured line leading to a sustained finish of stonefruits and yeasty autolysis. This is a well-concentrated and harmoniously balanced , refreshing Champagne showing good Pinot Noir presence and clarity with fine autolytic interest. Serve as an aperitif and with canapés. The Paul Louis Martin Champagne House has been family owned and run since 1864. A single estate of just 10ha in the Grand Cru Village of Bouzy, home to great Pinot Noir. Paul Louis Martin’s daughter Francine Martin-Rapeneau is aided by her son Vincent, and remain fervent about the quality of their champagne. Situated in a very favourable location on the south side of the Montagne de Reims hill Bouzy wines have much more weight, and power than those from La Côte des Blancs. While they are still excellent as an aperitif being more rich and robust in style they are able to stand up to a much wider variety of food accompaniments. 60% Pinot Noir – 40% Chardonnay.
