Hand picked and whole bunch pressed overnight, the fruit undergoes natural fermentation primarily in stainless steel with a portion in older oak barrels. The wine is matured for around 9 months in a combination of stainless steel and seasoned oak, building texture while preserving purity and site expression. Bottled dry with approximately 1.9g/L residual sugar.
