"I love that winemaker Ben Glover has used the words 'feral fermentation' on the back label of this wine because that's exactly what's happened to create this fabulously funky, moody, broody style. Wild yeasts, a long, slow ferment, extended time being matured on its lees has created a Sauvignon Blanc with depth, interest, complexity and a smoky backbone to support its fennel, melon, lemongrass, bruised basil, charred capsicum characters on the nose and palate. Chill only slightly then serve with Greek zucchini bake. Drink now through 2027" Yvonne Lorkin
This wine shows dramatic funk and citrus notes with underlying exotic fruits and floral notes. The extended time on the natural lees gives an unexpected texture as well as a deliciously nutty character. A full-bodied style of Sauvignon Blanc with a dried herbal edge, vibrant acidity and a long, persistent finish.
