Pale straw with clear hues. Fragrant aromas of pineapple, orange blossom and lime with a touch of melon and spice. Off dry with a medley of lemon, lime, pink grapefruit with hints of apricot and spice. Lovely acid balance with layers of complexity a nice steely minerality and phenol drive.
The fruit was hand harvested on 22nd April 2017 at 19.4 brix. The fruit was whole bunch pressed to tank and the juice was inoculated with selected wine yeast to undergo fermentation. The fermentation was stopped retaining around 22.4g/L residual sugar.
