Pale straw gold. The nose is a complex mix of lime, bees’ wax, honey and Nashi pear and is showing some of the delightful development typical of this noble variety. There is a moderate amount of sweetness on the palate from stopping the fermentation well before dryness. This is perfectly balanced by the typical racy acidity that is the hallmark of Riesling. The palate is generous, full and finishes clean with great length of flavour.

2018 was the second warmest vintage that Waipara had experienced in the previous thirty years and so ripening of fruit was achieved with ease. Even so, the region is still a relatively cool one by New Zealand standards and so ideal for the cultivation of Riesling. The cooler conditions are essential to the creating and preserving of the delicate aromatics of this variety.

Fermentation of the clear juice was carried out slowly at low temperature to ensure the aromatic elements were perfectly captured. The fermentation was arrested by chilling the wine to below zero which left a well- balanced amount of sugar in the wine. Minimal fining was done to assist with retaining the maximum varietal flavours.

Food Pairing: Perfect to serve alongside a lemony-pasta with prawns, a pot of steamed mussels or try matching with a beautiful snapper fillet.
