They craft Toi Toi Sauvignon Blanc from three Marlborough vineyards, each of which bring their own expression to the wine; BROOKDALE VINEYARD in the Southern Valley’s delivers tropical, ripe citrus and herbaceous notes. UTAWAI VINEYARD nearer to the coast brings more herbaceous notes and a minerality. CALROSSIE VINEYARD with it’s low cropping hill site located in a secluded valley between the Wairau and Awatere Valley gives powerful fruit showing capsicum, wet stone and nettle flavours. WREKIN ROAD in the Upper Brancott Valley brings vibrant passion fruit, stone fruit, and gooseberries. Zingy and fresh.Each vineyard is picked progressively as it reaches optimum ripeness. On average, each vineyard is picked 3-4 times. This provides multiple flavour profiles and blending components with which to create the Toi Toi style of Sauvignon Blanc.
Vintage 2022 was defined by its challenges. While big bountiful crops stretched the infrastructure, Covid struck down the workforce and the weather remained indifferent leading into the harvest period. There were many stories floating around of early picking and compromised crops. But those who allowed the fruit time on the vine were ultimately rewarded with wonderful, fresh and vibrant fruit flavours. Their vineyard teams in Marlborough are to be congratulated. Their diligence, and skills along with the regular updates on the progress of the crop to the winemaker, allowed them to receive flavourful grapes in great condition. Without their hard work the outcome may have been very different. This vintage will be one to remember for many reasons and when the dust settles, the main one will be the wines.
In the winery the wine is given 2-3 hrs of skin contact and then gently pressed. This helps add structure to the wine and no fining means they retain more of the grape’s natural flavours. The wine is fermented in stainless steel tanks with an array of yeasts; some to enhance aromatics and some to provide savoury notes, weight and structure.
