This is classic Barossa Shiraz. It shows rich, warm aromatics, with dark cherry, herbs, anise and bitter dark chocolate. The wine is marked by a clarity of fruit which carries a lovely richness and intensity. The palate is warm and inviting, showing depth with focus. A generous and flavoursome Barossa Shiraz with ripe tannins that melt into the concentrated finish.
The growing season began with consistent rainfall throughout winter. Spring remained warmer and drier than average and although bunch and berry size was reduced, the vines were off to a healthy start. The reduced berry and bunch size has produced grapes of great aromatics and flavour. Summer was long and relatively mild with quite cool nights. This has helped to retain the acidity and pristine fruit flavours in our Shiraz.
A combination of small and medium size static fermenters were used, with ‘wild’ yeasts present on the grape skins being allowed to initiate fermentation. Cultured winery yeasts were then added to complete the fermentation and parcels were then pressed and run to barrel with the result being a wine with excellent depth of colour, richness and complexity. Drink now or cellar for 5 - 7 years.
Food Pairing: Enjoy with green bean and mushroom stroganoff or grilled lamb cutlets with sea salt and rosemary roast potatoes.
